The idea itself is fine. I'd play through it when done. How you approach it and write it is the big thing though. If you add variables, it could be fun to replay with different combinations of crew, guns, cars, etc, which result in different experiences when robbing the bank.
As a choose your own story game, it's good to make sure there's plenty of options, and the journey to get there isn't too linear. Also try to avoid making too many unclear/luck based deaths, so people aren't just guessing what the best option is, and going back a page if they guess wrong. You can support the reader with written cues, to hint at what the "safe" options are, without directly saying it.
