I won't get the chance to post this again before leaving for camp, so here it is: If anybody was wondering how to access the secret levels on The Gauntlet 2, here's how.

To access Secret Level 1: The Seige

At the first fork in the road (lake or ocean) go to the forest and get the dagger. After killing the first monster, go to the lake, and on the first lake page, use the dagger. This will enable you to find the moon gem.

When you get to the page where you have to choose between the mountain or the valley, use the Moon Gem, and you'll get the sun gem. Then just play the rest of the game normally, and at the game's end, you'll be able to access the secret level.

To access Secret Level 2: Waking the Phoenix

At the page where you have to choose between the mountain or the valley, use the rock or the vine to access the secret cave. Then you'll face the hydra.

To defeat the hydra, either kill it with the hammer or cut off a head with the sword/dagger/sling and then use the stick. Afterwards you'll get the hydra heart.

After that, just finish the game normally, and at the end you'll be able to access the second secret level.

It is possible to access both levels at the same time, and if you do so, you'll get the highest score at the end of the game: 250.
