Could we have a function where we get to edit our posts up to about 30min after posting?

30 minutes is to much time, more like 10-5.

I'd also like to have the ability to edit our own posts.

I believe the problem with this was if you're in a debate then you could change what you said if someone tried to combat  the statement.

People came up with the idea that you can edit your post as long as no one else has replied to the thread yet.

I don't really see that as a problem. If these forums were dedicated to the particulars of proper debate, then yeah, that would be cheating. But the forums here are hardly the platform for serious discussion about anything, except perhaps for writing related issues. (Lighten up if this somehow offends anyone.)

 
Most forums allow users to edit their own posts and timestamp the latest edits. If one was concerned about someone misrepresenting a previous post somehow, there would at least be evidence that the original was edited, if anyone really cared.

Still, if you're in an argument with someone and they say something stupid and you call them out on it, they can just edit it out and call you crazy and claim to not know what you're talking about. Plus with how the forums are designed, it you delete a post on a thread then every post that succeeded it is deleted as well.

The ‘deleting a post that deletes following posts’ is definitely a problem. There’s no question that non-admin users shouldn’t have that ability! But editing your own post, even if it is to completely blank it out, is reasonable.

 
If we also had the ability to Quote other user’s posts, as well as edit our own, then you could call someone out on a goofy point, by quoting him before he edits the evidence. Otherwise, in most instances, not being able to edit just leads to a lot of poorly spelled posts with addendum and clarification posts following behind.

Hmm, then I guess 10 min is better, so if you posted then want to add or change something it's ok.

Couldn't you counteract this though? Just keep a tab on the edit button and wait for someone to call you on it and then change it?

You obviously didn't read the link I put above Cool. Even then it talks about how other people have suggested it. I'm pretty sure this has been requested countless times before.
