I have a question about making a story. Mostly, I would like to know what the maturity ratings stand for. I am making a story, and I cant tell the rating. I also would like to know what each storygame tag means.

7/8 might be considered equal to a rated R movie, 8/8 doesn't exist because there's a level of edge new writers should not aspire to even here unless they really know that they're doing. But just don't write porn or Warrior Cats fanfic and you should be good.

Is there any particular tag you're confused by?

I'm just gonna note here since you seem to be very young, that it's normal and even encouraged for readers to give some pretty blunt critical feedback. So make sure you've read some other stories around here to get an idea of the base quality level to not be unpublished, and pay extra attention to grammar, spelling, and formatting. You want it to be as polished and readable as possible before you make a story public.

I guess I'm a bit confused on what tag I should put if I have mild swearing and mentioning the word sex to explain something.

There's no tag for that, you just adjust the maturity rating accordingly

You should probably start with reading some of the stories around here to determine the "maturity" thresholds around here.

7/8 involves loving your sister. A lot and repeatedly.

CYS is an old site with a lot of traditions, and not nearly as many firm guidelines. The scale of maturity rating exists to give people a primer on the material within the story, and a number of 7/8 or lower maturity stories also have content warnings to further dissuade toddlers from reading them. Therefore, authors just put whatever they find appropriate for their story. Literature is subjective--turns out that rating literature is equally subjective.
